How to buy:
- "New" potatoes should be well shaped, firm and free from blemishes.
- General purpose potatoes should have smooth skins, free of blemishes, decay or sprouting.
- Try a touch of Merry Old England on your french fries – use malt vinegar!
- Store your potatoes in a cool, dark, dry area with good ventilation. Potatoes stored at room temperature should be used within a week.
- Don't wrap potatoes in foil, as this steams rather than bakes the potato.
