Scalloped Potatoes With Cheese

2 tbsp. olive oil
1 onion, coarsely chopped
2 garlic cloves
salt and pepper to taste
1½ tsp. fresh basil, finely chopped or ½ tsp. dried
1½ tsp. fresh oregano, finely chopped or ½ tsp. dried
2 cups potatoes, thinly sliced and peeled
¼ cup Parmesan cheese, grated
½ cup mozzarella cheese, shredded

In a large skillet, heat oil and saute' onion and garlic for 5 minutes or until onion is tender. Stir in salt, pepper, basil and oregano. Arrange potato slices in a well greased, shallow 1-quart baking dish. Sprinkle with Parmesan cheese. Cover dish with aluminum foil. Bake for 30 minutes at 400F. Remove foil and cook, uncovered, for about 10 minutes or until potatoes are tender. Remove dish from oven and sprinkle with mozzarella cheese. Run dish under broiler until cheese melts, about 2 minutes. Makes 4 servings.
