Potato Pie

4 medium potatos, peeled
2 tbsp. butter
2 tbsp. heavy cream
1 container (15 oz.) ricotta cheese
1 cup sour cream
½ cup Parmesan cheese, grated 
2 eggs, slightly beaten
1 tsp. salt
½ tsp. freshly ground black pepper
¼ tsp. nutmeg, grated
1 unbaked 10 inch pie shell 

In la large, heavy saucepan, cook potatoes in lightly salted water for 20 minutes or until tender. Drain potatoes and mash until smooth. Place in a medium bowl and beat in butter and cream. Add ricotta, sour cream, Parmesan cheese, eggs, salt, pepper, and nutmeg, blend well. Pour into unbaked pie shell. Bake for 50-60 minutes at 400F until golden brown. Serves 8.
