Potato Mushroom Cheese Bake

4 potatoes
2 tbsp. butter
¼ cup scallions, chopped
¼ tsp. paprika
½ lbs. mushrooms, sliced
½ lbs. cheddar cheese, shredded
4 eggs
2 cups milk
salt and pepper to taste
1½ tsp. fresh tarragon, finely chopped or ½ tsp dried
2 tomatoes, sliced

In a large saucepan, cover potatoes with lightly salted water and cook for 20 minutes or until tender. Drain, peel, sliced potatoes. In a large skillet, melt butter and saute scallions, paprika and mushrooms for 2 minutes. In a shallow, greased 2-quart baking dish, layer half the potatoes, mushroom mixture and cheese. Repeat. In a large bowl, beat eggs, milk, salt, pepper and tarragon. Pour over vegetables in baking dish. Bake for 50-60 minutes at 325Fm or until custard is set. Cover with sliced tomatoes and retun to oven for 5 minutes.
