Potato Cheese Puffs

2 cups hot mashed potatoes 
1 cup grated cheddar
2 tbsp. butter
1 tsp. salt
2 large eggs, seperated
½ cup milk
¼ tsp. pepper
¼ tsp. dry mustard
¼ cup grated cheddar (for toppings)

Cook 3 large potatoes and mash. Add grated cheese, butter and salt. Mix well. Mix milk, egg yolks, pepper and dry mustard. Add to potato mixture. Beat egg whites until soft peak stage. Fold into fist mixture and blend. Put into butterd baking dish. Sprinkle the topping cheese over all and bake at 350F for 45 minutes. Serve immediatly.
