Potato and Hamburger Roll

3 cups potatoes, mashed
1 medium onion, chopped
2 garlic cloves, minced
½ lb. hamburger 
2 tbsp. drippings
2 eggs
2 slices bread softened in water
1½ tsp. salt
dash of pepper
¼ tsp. rosemary
2 tbsp. parsley, minced
3 tbsp. dry breadcrumbs 

Saute' onion and garlic in drippings until tender. Add hamburger and eggs. Add bread and seasonings. Mix thoroughly. Sprinkle pices of waxed paper with bread crumbs and press meat crumbs to obtain a rectangle about ½ inch thick. Spread mashed potaties, mixed with parsley, on top of meat. Using waxed paper, roll meat and potatoes (jellyroll fashion) and place on a greased shallow pan. Brush with drippings and bake in 350F oven for 1 hour. Serve with tomato or other sauce.
