Crumb-Coated Potato Patties

1 large egg
1½ cups cold seasoned mashed potatoes
¼ cup cheddar cheese, shredded
2 tbsp. flour
2 tbsp. minced onion
1/8 tsp. garlic salt
dash of pepper
1/3 cup dry bread crumbs
3-4 tbsp. margarine or bacon drippings 

In a medium bowl, lightly beat egg. Add mashed potatoes, cheese, flour, onion, garlic salt and pepper, stirring until well blended. Place crumbs on a piece of waxed paper. With floured hands, shape one fourth of the potato mixture into a 4-inch deameter patty. Coat both sides of patty with crumbs; set aside. Repeat with remaining potato mixture and crumbs. In a large skillet over medium heat, cook patties in margarine until crusty and browned on each side. Reduce heat if patties are browning too quickly. Serve immediatly or place, uncovered, in a preheated 200F oven to keep warm. Makes 4.
